The main products of Panificio del Duomo certainly include the PDO bread of Altamura, a specialty of Italian white art, handcrafted with Apulian grains and mother yeast. It is a very old recipe, which has remained unchanged over time and is appreciated today all over the world.

The quality of the PDO bread of Altamura (protected designation of origin) is guaranteed by the Protection Consortium, invested with the functions of control, promotion and enhancement of the PDO, as well as supervision against any form of counterfeiting. By monitoring all stages of production, starting from the origin of the raw material, the Consortium guarantees the consumer the traceability of the product. Inside it brings together farmers, millers and bakers.

Frise and Friselle

The Friselle are a toasted bread in the shape of a tarallo typical of the cuisine of southern Italy, in particular of Puglia. Made with durum wheat flour, water, yeast; first they are baked in the oven and then cut in half and baked again in the oven to take on the typical crunchy and toasted texture and a crisp, rustic surface. Subsequently they can be served with seasoning of your choice: water, oil, cherry tomatoes, basil, tuna, olives!
